I’ve been experimenting with trying to have a more wholesome breakfast, and whilst I’m still a big smoothie fan – I think I have a new favourite. Particularly for days in which I need to leave the house before 7am, this has been a godsend as I can just mix it up the night before and grab it to go. Often, I can then just munch it at my desk when I’m more ready to function!
The mix of the pistachio nuts with the sweetness of the raisins really is a great combination, and I love knowing that the nuts provide a nice protein kick too.
Ingredients:
1 cup of oats
1.5 cups of coconut milk
1 tablespoon of Pistachio Nut Butter
1 tablespoon of agave syrup
1 tablespoon of chia seeds
A handful of raisins
Method:
Using something akin to nutribullet, blend the nut butter, syrup and milk together until nice a smooth.
Whilst that’s blitzing, mix together the oats, chia and raisins in the container that’s fairly compact. I use this Joseph Joseph GoEat Space Saving Soup Pot – Green but just leave the bit for bread off. It’s nice a airtight and ensures my breakfast doesn’t spill on route the next day.
Once the milk is done I simply tip this over the oats, give it a stir and then leave until the next day.
If I’m feeling particularly wealthy on time in the morning, I do sometimes stop to crumble a few whole pistachio nuts on top. But that’s really just being decadent because I can!
