Food: The Best Popcorn Recipe Ever

We love to curl up as a family for a movie with a big bag of popcorn. But I have to admit that I’ve never really understood why people don’t make their own! It’s so simple and I just don’t see the allure of coating it in caramel. Warm and straight from the pan is the best way to go… but that’s not to say you should neglect on flavour.

After experimenting with icing sugar and various savoury toppings. We’ve eventually settled on cinnamon-sugar as our favourite flavour. Given that cinnamon buns are always a sure fire hit this is no surprise. But the cinnamon is just enough to take the sweetness down a notch, whilst creating enough of a warming smell to add to the cosiness of movie night.

The next added secret is that we don’t use butter. As Katie is dairy-free, butter has to be off the menu for family creations so we’ve brought in coconut oil as a substitute. I love coconut oil anyway, but I’ve found that this just brings an extra dimension to popcorn. It’s not as greasy and doesn’t leave as much of a lingering after-taste! Win win.

Method

To make the popcorn, I melt a tablespoon of coconut in a non-stick frying pan (with a lid) before adding a cup of popcorn kernels. Over a medium-high heat, this only takes a couple of minutes to pop – causing great excitement for the kids!

Once the popping subsides, I dump the whole lot in a bowl and melt a little more oil to drizzle over the top.

Whilst waiting, all the kids need to do is mix a teaspoon of cinnamon with a table spoon of light brown caster sugar.

The popcorn gets drizzled with melted coconut oil and the tossed to coat. The cinnamon-sugar mix gets added and the whole lot gets a good stir.

The result? Tasty popcorn that’s ready in 5 minutes – so a second batch can always be whipped up easily!
